Grandma Kathleen’s Corn Pone Pie

My grandma had me over her house from Friday night to Sunday night every single week. She taught me so much and I still use all of her wisdom in my daily life endlessly. This recipe was one of her go tos and every time I make it I feel like I’m right back in her kitchen. A grandmother’s love is special beyond measure, so are her recipes.

My suggestion is to eat it with salt , pepper, lots of butter on the cornbread and a bit of homemade applesauce on the side.

Lots of butter and love make a homemade meal complete.

Grandma Kathleen’s Corn Pone Pie

(Single batch)
1 lb browned beef
1 can stewed tomatoes all liquid
1 can red beans all liquid
( I often make a double batch, use my frozen summer tomatoes and sauté onions to go with, I use 3 cans of beans)
Sautéed all together
Season w/ s& p
Corn bread on top ( 1 c Einkorn flour, 1 c organic cornmeal, 2-3 eggs, 1/3 c melted butter, 1:3 c sugar, coconut sugar or maple, 1 c milk, 1 tsp Redmond salt, 3 tsp baking powder, add a can of drained corn, jalapeños, cheese or any additional corn bread Goodness)… or… 2 boxes of Jiffy cornbread

I like using a non reactive pot like Le Crucet

400° uncovered until cornbread is ready

Homemade Applesauce

5-6 organic apples peeled, cored, chopped

1/3 c water

3 tsp honey

Dash of homemade vanilla

1/2 tsp cinnamon or one stick

1 T butter

Place in pot covered cook together on low heat until easily smashed with a potato smasher. Smash and place in a Ball jar. Refrigerate or can.
