I’m fully obsessed with chai and have been writing all sorts of different chai recipes in my endless notebooks for years. The other day I had the most wonderful set of spices show up on my doorstep. I couldn’t wait to make something with them.
I also love to collect honeys from around the world. I thought how fun it would be to be to create a love child between my chai obsession and my great world adventure with honey.

This is what came together. It’s incredible to be able to imbue any warm beverage with an instant kiss of chai.
Chai Honey: (in no particular order)
1/4 tsp chili flakes
1/2 star anise
1/4 tsp ginger
1/4 tsp cinnamon
4-5 cloves
1 bay leaf
1/8 tsp black pepper
1/2 tsp vanilla
1/4 tsp Kitchen King masala
Pinch chili powder
Pinch mustard seeds
Pinch fenugreek
1 curry leaf
2 cardamom pods
Pinch roasted cumin
Pinch un roasted cumin
1 1/2 tsp turmeric
1/2 cup raw local honey
1 drop each Thieves, black pepper, lemon, cinnamon bark (2), cardamom, frankincense (2) vitality oils
Toast any spices that are whole gently until fragrant then grind into powder. Add all ingredients to honey and enjoy in your favorite warm beverage.
