Delicious mango barbecue chicken

Mango inspired barbecue-ish sauce

While I was on a trip to Maui I made what started out as me just trying to make a simple barbecue sauce. Then …. I saw the mangos…. Then I went into my mom’s spice cabinet and this is what happened. I used feta on top at the end because I didn’t have Parmesan but in retrospect I would not change it now even if I did. The flavors were just perfect.

This sauce is very chunky but I really liked the texture when I added it to the finished dish. I served it with an Italian spinach noodle and sheep’s milk feta crumbled on the top. It was certainly a super unique dish that I cannot wait to make for my family.

Mango barbecue sauce

3/4 red onion chopped

1/8 c avocado oil maybe add a little olive oil as well so the total might be closer to 1/4 c

1/2 jalapeño finely diced

5-6 garlic cloves sliced

Bellalicious Hawaiian seasoning 1-2 T

Salt (I used Celtic )

1 1/2 cans organic diced tomatoes

2 mangos diced

2 drops black pepper oil

1-2 T honey

1/2 lemon juiced

S & p

More spices and possibly cayenne, ( I say this because the seasoning I used just said spicy and hot… haha…. Sometimes you just never know)

Star with the onions in the neutral oil and add the jalapeños cook a bit then add the garlic. Cook until fragrant then add the tomatoes and mangoes. Add the remaining ingredients….

Cook down and cool

Lemon Chicken

2 lb organic chicken thighs rinsed & diced dried ( I always wash my chicken with a veggie enzyme cleaner and rinse them oat dry)

1 lemon juiced

1 drop lemon oil

3-4 T olive oil

S & p

3-4 garlic cloves crushed

Marinade for at least 20 min

Sauté chicken until done remove from pan and reduce the liquid until it looks like a sauce. ( I added a 1/2 cup of cooked diced purple Japanese sweet potato at this point to thicken the sauce) when the sauce is thick add the chicken back and toss. Remove from heat.

Add delicious Hawaiian mango barbecue medley to the chicken. You might want a bunch or to reserve some for another meal. Serve over rice, noodles, quinoa or even just on the side of a salad cooled. I added organic sheep’s milk feta on top and it was delicious.
