This soup is a one of the best and easiest soups that I make. Every time we have a big pot of tortilla soup, and a group of friends over it always amazes me how fast it goes. Also every time someone asks me for the recipe… So here it is
Tortilla Soup
2 c chopped onions
3-5 carrots peeled and chopped
4-6 ribs of celery chopped
3-4 crushed garlic
2 bay leaves
2 T Kerrygold butter or other… but Kerrygold is best 🙂
2 T olive oil
2 1/2 qts chicken stock (always organic) I used my own bone broth
2 chicken breasts cooked and chopped (same* see above)
1 28 oz jar of chopped tomatoes (I like tomatoes in glass jars not cans)
1 tsp. cumin
1 tsp. coriander
1+ tsp Himalayan salt
6-8 chopped corn tortillas (I like Food for Life sprouted tortillas in the freezer at Whole Foods)
4-6 slices of pickled jalapeños chopped
Start onions in the butter. Add olive oil, bay leaves, carrots and celery till soft. Add garlic until fragrant. Add stock, tomatoes, cumin and coriander…. Simmer….. Add chopped tortillas, chicken, jalapeños and salt to taste…. Simmer
Serve with fresh cilantro, chopped avocados, sour cream, grated cheddar cheese & organic corn chips
