For years I have been making these super fast pickles. They are inspired by the little dishes of pickled cucumber that they give you at sushi restaurants. I find these little treats so delightful especially since I’m usually super hungry when I sit down and that quick satisfying crunchy treat just sits perfectly in my belly.
Any herbs or vinegars can be used to modify.
- Organic cucumbers peeled and sliced thinly
- Apple cider vinegar
- Organic white vinegar
- Olive oil
- Pinch Himalayan or Redmond Real salt
- Pinch organic sugar
Slice cucumbers add vinegar. I usually do half & half with the vinegar. For one cucumber I use about 1-2 T of each vinegar and 1 T olive oil. Add salt & sugar. Let sit for 2-5 minutes & Enjoy
Occasionally I’ll add fresh herbs like dill or tarragon
These don’t last long in our house so they are usually made in a glass bowl on the counter. But sometimes I take them on the go in a wide mouth Ball jar.
