For most of my life I have had an amazing diet. This is something that I am forever grateful for. You see I was raised by parents who taught me about high quality, organic, high vibrational foods. We were raised knowing how to prepare real foods with love and intention. Now, I usually eat lots of fruits and veggies with added dense proteins when my body craves them.
Lately I have been playing with my food and finding new and wonderful ways to make nutrient dense food with a raw flair. I have been juicing since I was a munchkin. I have been making my own almond milk….Yum did you know that it is so easy? I am always finding new and wonderful ways to enjoy my salads. Recently I even made raw chocolate pudding with avocados. It sounds weird but it was amazing!
My latest venture into raw and delicious was cheesecake. Yes, cheesecake! And it was amazing! Since I had my second daughter and have been breastfeeding her, I have not been eating dairy. Her little digestive tract does not like it one bit! But I on the other hand, LOVE IT! I have been missing my cheese. So, I have found ways to go dairy free for her and still satisfy my cravings for cheese.
Now I want to share this yummy rawness to show you how good it can be!
Raw & Delicious Cheesecake
Crust – 2 cups of walnuts, macadamia nuts will also work 1/2 cup of fresh, pitted dates – Mix in food processor until well blended and press into springform or other pan. Set in freezer until cashew mix is ready.
Cheese-like mix – 3 cups of raw cashews (soaked in water for an hour) 3 peeled whole lemons (With seeds removed) 1/2 cup or less maple syrup or honey 1+ tsp vanilla (I love vanilla. For true rawness use vanilla essence.) – Place all ingredients in VitaMix or other blender and blend until smooth. Pour on top of crust and set in fridge to chill.
Topping – 2 cups frozen strawberries 1 cup or less coconut milk – Blend in VitaMix with a touch of maple or honey and serve. If you prefer other fruit on top try it. I think that I will try blueberries today.
