So… Do you ever get that craving for something that just haunts you until you have it? Well with the colder weather I have been craving pho. Yea, its pronounced pha…. But whatever you call it, it is a beautiful bowl of fresh Vietanemese goodness. Often when I order pho out just makes my body happy. So tonight I made my own and dam if it wasn’t better than most ….. 🙂
So I wanted to write it down to duplicate & share…. Enjoy!
Pho
2 qt. low sodium chicken stock
3 leaves kaffir lime leaves
1 inch piece of fresh ginger peeled and sliced
1 stalk lemongrass cut into 1 inch pieces or rind of 1/2 lemon (organic)
1 T sugar
2 T fish sauce
3-4 pickled jalapeño slices
1-2 tsp hym. salt
(boil all above ingredients for 20 min. -remove solids from broth and discard them)
2 boneless organic chicken thighs sliced into thin strips
(place into broth and cook until done, remove and save)
add thinly sliced onion (1/4 c) to broth for 10 min cook on low till soft
Meanwhile cook rice noodles & rinse.
chop 2-3 scallions for broth
chop 5-10 mushrooms thinly
get fresh cilantro and Thai basil leaves ready
Next add mushrooms & scallions to broth warm through
To serve place noodles in bowl, add chicken, scoop broth on top. Dress your soup with fresh cilantro and thai basil and enjoy
I added Sriracha for a perfect kick at the end and it was just perfect!
