Artichoke, fennel and parmigiana salad

I made this incredible salad the other night inspired by a recipe I saw in a Jamie Oliver cookbook. As usual I completely changed it because I can’t follow a recipe for the life of me but the end result was absolutely delicious. I served it with a grilled bone in steak from Polyface, rosemary potatoes and a delicious corn and butter bean succotash from a local farm store.

All of my recipes are here as a place to save my favorite foods I have made for my family in my kitchen. The key ingredient is always love. Enjoy.

  • 2 artichokes broken down, remove leaves and choke & shave on a mandolin
  • One fennel bulb shaved
  • Parmigiana or Romano shaved
  • Lemon
  • Olive oil
  • Salt & pepper
  • White balsamic vinegar

After chokes and fennel are shaved immediately add lemon juice to prevent browning. Shave cheese with a vegetable peeler. Add enough to make it interesting. Add great olive oil and salt and pepper. Finish with a high quality white balsamic vinegar.

I get bot my olive oil and vinegar at a local specialty store that imports both oils and vinegars that make my head swoon.
