Feta and tomato gluten free pasta

I saw a quick video of this pasta dish and just had to try it with these beautiful cherry tomatoes that I have been getting from the Neighborhood Harvest lately. In my opinion the only way that you get a good tomato in winter is cherry tomatoes.

Cherry tomato & Feta pasta

  • 1-2 packs organic cherry tomatoes cleaned with Thieves veggie wash
  • 1 feta brick
  • 1 package Tinkyada gf pasta
  • 1-3 T olive oil
  • Himalayan salt to taste
  • Red pepper flakes
  • Parmesan for serving

Cook pasta in well salted water. I used penne but any shape will do. Place tomatoes, olive oil, salt and love in a wide sauté pan. Cook until they start to pop. Add feta brick sprinkled with pepper flakes to the middle of the pan. Cook together for about 3 minutes. Use a potato masher to smash and combine the feta and cooked tomatoes. Add pasta to pan and stir together. I added a bit more pepper flakes at the end.

Serve with parm & enjoy

I think salmon or chicken could be added nicely if desired

Pasta tip…. don’t drain the pasta too well so some water remains and lightly olive oil noodles and cover if they are waiting for a bit to add to the tomatoes.
