Gluten-Free Waffles

Oh these are good…  I have yet to find a place that makes waffles for those of us who have removed the inflammatory glue from our diets. I had to take my waffle needs in my own hands. There is something so soul satisfying about a glistening & golden butter and syrup delivery device.  Here is what was created…. Yes, it is perfectly soul satisfying!

Always use organic butter and pure maple syrup.

1 cup Pamela’s gluten-free all-purpose baking/pancake mix

1/2 cup coconut flour

2 organic happy eggs

1/2 tsp salt or less

1/2 tsp vanilla or more

seltzer water – ( 1-2 cups you will be surprised how much the coconut flour will absorb. Leave it a bit lumpy)

2 tbs coconut milk

Mix eggs and some of the seltzer and coconut milk, then add the other ingredients and heat up the waffle iron. Add seltzer until consistency is pourable. We added cooked and sliced bacon to the batter and served with butter and maple syrup……. Yum!!!
