This dish was inspired by a recipe that I thought looked good… And then I added all these pretty colors…. It is beautiful and it will make you feel the same way!
Nori Wrap with Hummus, Quinoa & Veggies
Sauce –
- Soak 1 cup raw cashews for at least 30 min, add to Vita-Mix blender
- 2 T tahini
- add 1 large fresh or rehydrated date
- 1/2-1 juice of lemon
- 1/4 juice orange
- 1 T rice vinegar
- 1/2 tsp coconut palm sugar
- water to make sauce consistency
- cumin, coriander, cayenne pepper, onion powder, turmeric & salt to taste
Hummus– add ingredients to VitaMix blender and blend until smooth
- 2 cups cooked chick peas
- 3-4 T tahini
- 1/2-1 juice of lemon
- 1/2 c olive oil or more
- 2-3 cloves crushed garlic
- Himalayan salt to taste
Quinoa- cooked with kombu and mix with
- Add 1 c quinoa with
- 3 T olive oil
- lemon juice to taste
- 1 T grainy mustard
- 1/2 c whole chick peas
Kale salad- place all in bowl and toss
- kale – curly in small pieces
- grated carrots
- grated beets
- sliced red onion
- olive oil
- lemon juice
- crushed garlic
- apple cider vinegar
- salt to taste
Veggies-
- Carrots sliced in quick pickle of rice vinegar & coconut palm sugar
- cucumber sliced
- pickles sliced…. Yes these are amazing in this!
- avocado sliced
- olives would also be good but I was out
- Any other veggies that you like
Layer– On nori sheet
- Hummus
- Quinoa
- Veggies
- Kale salad
- Sauce
Oh my goodness this is amazing…. So worth the joy that it takes to put together
