Greek Potato Salad- Coastal Chiropractic Style

I love sharing my table with friends. Sharing this joyful space is a great way to experience past and current generations of love through food. Many of my favorite dishes are passed down through many generations and have evolved through those generations into love manifested on my plate. You see, I am a big lover of good food. I believe that food is an extension of love, celebration, offering and just downright makes me feel good!

Many people in our society have lost the connection of love through food and that is something that I think should start to change. When you grow or purchase your ingredients from local sources such as farmers markets and local farms I feel that you start to become reconnected with the energy in your food. You start to recognize the wonder of the fuel that is burning in your body. That then reconnects you to the wonder that is your body…. There you have magic!

I just love Greek food. All of the flavors are so fresh and delicious. I have been making this vinegar based Greek Potato salad for almost a decade. I learned it from a family friend and wanted to share it. So all of you who have asked me for the recipe can now make it in your kitchens…. ENJOY!

These are my fave ingredients for my vinegar based Greek potato salad...Yum!...

These are my fave ingredients for my vinegar based Greek potato salad…Yum!…

  • 6-8 large white potatoes peeled, chopped and boiled
  • 1-1 1/2c chopped cherry tomatoes
  • 1 English cucumber peeled, seeded and chopped
  • 1 package of feta crumbled (My fave is in the pic)
  • 1 jar of Kalamata olives chopped (“)
  • 1/4 c chopped scallions
  • 3-5 T fresh oregano chopped or 1-2 tsp dried
  • juice of one lemon
  • 1/2-1 c olive oil
  • 1/4-1/2 c white vinegar
  • Himalayan salt and fresh ground pepper to taste

I like to add the vinegar and olive oil and lemon juice to the warm potatoes so they just soak up that tasty vinaigrette. Add the rest of the ingredients… Toss and enjoy.
