Summer Salad Greek inspired

A few years ago we went on a cruise from Italy through Turkey, Croatia and Greece. One of the magical moments as is always the case for me was the food. I’m a serious foodie and I absolutely love new food experiences during travel.

I experienced a Greek salad along the shore with my parents and my husband that was just perfection. It was such a simple salad but the ingredients still sing the song of that moment to me every time that I put them together. The tomatoes were rough cut, not sliced. The cucumbers were the same. The olive oil was next level pure pressed sunshine and earth….. and the feta was just a blessing of the moment.

The other day my mom made a simple salad that reminded me of that moment in Greece. The next day was looking at the tomatoes on my counter and decided to create something similar. But the end result is something I never want to forget. As are most of my recipes on this blog this is a place for me to remember those perfect moments in the kitchen.

Summer Salad Greek inspired

  • 2-3 ripe tomatoes rough cut
  • 1 peeled cucumber rough cut
  • 1 avocado cubed and scooped
  • 1 can drained cannellini beans
  • 1/4 red onion rough cut
  • 1-2 flats sheep milk feta crumbled (in water base)
  • 3-5 T Olive oil
  • 2-3 T apple cider vinegar
  • 1-2 T white balsamic vinegar
  • 1- 2 tsp fresh or dried oregano
  • 1-2 tsp Herbs de Provence
  • 1/2 lemon juiced
  • Himalayan salt to taste
  • Fresh cracked pepper

Serve immediately and enjoy. ❤️
